For this week’s recipe, we propose a new way to prepare your favorite fish. A simple vegetable soup that is a charm to concoct with whatever you have on hand and whatever fish you like.
Simple fish soup
Your favorite fish (we used cod)
1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
3 carrots, roughly diced
½ cabbage, roughly diced
1 can (12 ox) of corn, rinsed
½ can of diced tomatoes
4 cups of chicken or vegetable broth
Salt and pepper
2 tbsp of curry or curcuma
½ tsp salt
2 tbsp nuts (almonds, peanuts, any seeds, …_)
Over medium heat, sauté the onion and the garlic in the olive oil for 5 minutes. Add the carrots and the cabbage and cook for 10 minutes. Add the broth and bring to a boil. Lower the heat and let simmer until the vegetables are tender. Season to taste.
Meanwhile, slowly heat the spices until they fill the room will their flavors. Repeat the process with nuts, and then crush them into little pieces. Mix the spices and the nuts together and lay them on a large plate. Roll the fish in the mixture, until it is completely covered.
In a 400 F heated oven, bake the fish on a baking sheet covered with tinfoil for 15-20 minutes, or until nicely crispy and golden.
Serve the hot soup with pieces of fish and grilled pieces of bread. Bon appétit!
